Mountain Man (egg casserole)

This meal is best made in a dutch oven. We find that a 10" or 12" regular depth oven works well. For guidance on dutch oven cooking, please visit our dutch oven page for more information. We have found this to be a favorite among children as well as parents. If you are familiar with dutch oven cooking, you will understand how easy this meal is to clean up.

Ingredients (for 4 people)

  • 8 eggs (or 2 cup egg substitute)
  • 1 medium onion - diced
  • 2 medium potatoes - diced
  • 1/2 lb breakfast sausage (Bob Evans works well)
  • 1/2 c milk
  • 2 cup shredded cheddar cheese (sharp for extra flavor)
  • 12 ct. tortilla
  • 2 cup salsa
  • Tobasco sauce
  • Salt/Pepper to taste
  1. Place dutch oven atop small bed of charcoal. Approximately 20-24 charcoals will work well.
  2. Brown breakfast sausage, onion, and potatoes in the dutch oven. Cook until sausage is browned and potatoes are cooked through. Reduce heat by removing charcoal if necessary.
  3. Scramble eggs, milk, salt, and pepper together. Add to sausage mix. Add cheese and stir into mix.
  4. Reduce heat to 8 charcoal under oven. Place dutch oven lid on top of oven and place remaining charcoal on top of lid. Cook for 10 minutes or until eggs are completely set. COOKING TIME VARIES DRAMATICALLY due to variance of charcoal. Can be as much as 40 minutes.
  5. When eggs are almost set, remove charcoal from lid. Wrap tortilla in foil and place on top of hot dutch oven lid.
  6. Scoop eggs into tortilla and add salsa/tobasco sauce to taste.

Clean-up:

Remove any remaining debris. Add water and cook, preferably boiling. Use a long handled scrub brush to scrub any additional debris away. Dump water and re-oil dutch oven with vegetable oil if necessary. Reheat oiled dutch oven on warm bed of coals to dry and set oil.
